Maple Bacon Potato Salad

20160628_153356A Club favourite, now yours to share and entertain with.  Enjoy this great summertime salad, wonderful for backyard BBQ’s, picnics, potlucks, or Canada Day parties!


2 lbs.               Baby Potatoes (skin on or off)

1 Cup              Mayonnaise

1/3 cup            Cup of Maple Syrup

1 Tsp.              Salt

1/2 Tsp.          Pepper

3-5                  Green Onions, Sliced (2-3 for Salad, 2-3 for Garnish)

5-10                Strips of Crisp Maple Bacon, Chopped (Optional)


Boil or Steam Whole Baby potatoes for 30-45 minutes until fork tender. While Potatoes are cooking in a separate bowl add all remaining ingredients, set aside half the green onion and half the bacon for garnish.  When the Potatoes are finished cut into four quarters, lengthwise, and add to the bowl of dressing, and mix well.  Garnish with remaining sliced green onions, and bacon.

Makes 5-6 meal portions.
